RED PEPPER PASTA WITH CHICKEN

Ingredients

  • 4 tablespoons unsalted butter
  • 3 chopped garlic cloves
  • 4 cups heavy cream
  • 1 1/2 teaspoons kosher salt
  • 1 1/2 teaspoons black pepper
  • 1 1/2 cups grated Parmesan cheese
  • 1 cup pureed roasted red peppers
  • 1 pound penne pasta
  • 2 chicken breasts, boneless, skinless cut into bite-size pieces
  • Olive oil

Directions

To make sauce melt butter in a large saucepan over medium heat.  Add garlic and saute until garlic is golden brown, about 3 minutes.  Add cream, salt and pepper and bring mixture to a boil over medium low heat.  Reduce heat to a simmer.  Stir in the Parmesan cheese and red pepper puree and continue simmering until sauce is thick.

While sauce is simmering pour olive oil into skillet and add chicken.  Cook until chicken is no longer pink and somewhat browned.  Add to sauce.

Cook pasta according to package directions and drain.  Stir pasta into the sauce and mix well.
